This is a sun-kissed sauce with a medley of vegetables.
Works well with many pasta shapes, but we feel works very well with Trottole as a big bowl of sharing pasta, the sauce will get right in the coils. Or with Penne Regine or Lumaconi for making Pasta al Forno, Pasta Bake, topped with plenty of cheese.
Vegetable Pasta Sauce
Ortolana simply translates to “Greengrocer” and that reflects the ingredients inside the sauce. This is a sun kissed sauce with a medley of slow cooked vegetables. Onions, carrots, celery & garlic are sautéed down until they are super soft and then paired with chopped aubergines, courgettes and peppers and left to simmer, finished with a big glug of oil.
A great staple to have in the pantry for a quick family meal.
